EASY AIR FRYER MEALS

My stove + oven have been out for the past month and at this point, I’m completely over it. Fortunately, I have several countertop appliance options to help maintain my normal meal plans until it’s repaired. Relying solely on the microwave and ordering take-out every other day just wasn’t an option for me. The goal has been to prepare meals that are as fresh, health-ish, and nutritious as possible. Do you have a handful of grocery stores that you normally shop with when it’s that time to load up on food items? Depending on what I’m cooking, I will definitely drive to a few different stores to purchase certain brands, specialty, or food items.

Trader Joe’s is definitely at the top of my list! Not only because of the organic options, (I really love their produce selection) but for their in-store brand specialty items.

CREAMY GARLIC TUSCAN SALMON WITH SPINACH & DRIED TOMATOES

Sockeye salmon is my fish of choice and I normally try to incorporate it into my meals a few times a month. I prefer sockeye because it’s super flavorful, rich, and loaded with omega-3 fatty acids. My go- to method of cooking salmon is to pop it into the oven, serve with a side of veggies and rice, and call it a night. This night, however, I wanted something a little more delicious than the norm 😉.

Date Night with Kabana Rooftop

Hellllllo everyone!  It's been a while!  I have been away for some time you guys--and with good reason.  This summer I really wanted to focus on having a real summer vacation.  This included heading out West for a turned up Vegas bachelorette party and back to my home state of California for my long time friend's wedding.  I had such a blast and it was so good for the soul to reconnect with friends I've known for over 25 years.
