15-Minute Lasagna

It's Monday, so you know the drill.  Still coming down from the cloud nine of the weekend, finished your 8 hours in the office, and was just barely able to battle the 5' o'clock traffic without fussing folk out.  So now we're home and the last thing we want to do is have figure out what to cook for dinner. Allow me to step in and help you out here : ).  This 15- Minute Lasagna will have you finished before 8 PM, just in time to catch your favorite shows on VH1.  What's even better is that it's cooked in one pan so you only have one dish to wash!  Amen!

You ready?  Let's do this..

Ingredients:

  • 2 packs of Ground Chicken (I prefer Perdue)

  • 1 small Yellow Onion (Diced)

  • 1 Tablespoon of Minced Garlic

  • Salt & Pepper

  • 1 8-oz jar of Tomato Sauce

  • 1-2 boxes of Gluten Free Cafe Rice Lasagna No Boil Noodles

  • Mozzarella cheese

  • Parsley flakes

  • Italian seasoning

First, brown the ground chicken and diced onion in a large skillet over medium-high heat.  Drain excess grease if necessary, then turn heat to medium.  Add minced garlic and stir for one minute until fragrant.  Be sure to season your meat well with salt and pepper.  I also added a few dashes of Italian seasoning to mine.  

Next take the lasagna sheets, break them in half (medium sized pieces) and add them on top of your meat.  Add tomato sauce.  Try to spread the lasagna sheets throughout the meat so that you have a few sheets inside and on top of your ground chicken.  Then pour over 2 cups of water and sprinkle with salt and pepper.

Cover and simmer over medium to medium-low heat.  While cooking, occasionally shake to evenly distribute the noodles as they soften.

In 15 minutes, noodles should be nice and soft.  Turn off the heat, top with cheese and stir to combine.  Top with parsley flakes.

This is a yummy meal that will be done in a matter of minutes!  Perfect for Monday nights!  It was a big hit for hubby and I!  Enjoy!
